Vegan Biscoff Cake

If you love Biscoff, then this is the cake for you! It is delicious, easy to make and completely Vegan friendly.

To make this cake, you will need the following:

Ingredients for the Cake

  • 300 mL Soy Milk
  • 425 g Self Raising Flour
  • 200 g Caster Sugar
  • 200 g Vegan Butter
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Bicarbonate of Soda
  • 1 tsp Ground Cinnamon
  • 1 tsp Vanilla Extract
  • 75 g Crushed Lotus Biscuits

Ingredients for the Topping

  • 200 g Vegan Butter
  • 400 g Biscoff Spread

Method

Step 1

Preheat the oven to 180 degrees Celcius (fan).

Grease two cake tins and line them with baking paper.

Step 2

In a medium-sized bowl or jug, mix together the milk and apple cider vinegar.

Leave the mixture to the side for 5 minutes to slightly curdle.

Step 3

Add the caster sugar, self-raising flour, bicarbonate of soda and ground cinnamon to a large mixing bowl.

Mix well.

Step 4

Melt the vegan butter and allow it to cool slightly.

Once cooled, add the butter, milk and vinegar mixture and vanilla extract to the dry ingredients.

Use a handheld mixer or kitchen aid to ensure that all the ingredients are thoroughly combined.

Step 5

Crush the lotus biscuits. You can use a pestle and mortar or add the biscuits to a zipped food bag and crush them with a rolling pin.

Once finely crushed, add the biscuit crumbs to the cake batter and mix.

Step 6

Split the mixture equally into the two cake tins.

Bake for approximately 25 minutes and use the toothpick test to ensure that the cakes are baked all the way through.

Once baked, leave to cool for 5 minutes in the tins and then transfer onto a cooling rack.

Step 7

Once the cakes are completely cool, carefully cut the tops off to ensure that they are flat.

Mix the vegan butter and Biscoff together for the filling and topping.

Construct the cake.

Step 8

Finish the cake by sprinkling some crushed lotus biscuits on top and adding a whole one (or two) for decoration.
