My oaty coconut biscuits are chewy and delicious, quick and easy to make, and 100% vegan friendly.
To make this recipe, you will need:
- 150 g Oats
- 95 g SR Flour
- 50 g White Sugar
- 80 g Light Brown Sugar
- 45 g Desiccated Coconut
- 75 g Coconut Oil
- 1/2 tsp Vanilla Extract
- 1/4 tsp Salt
- 6 tbsp water
Preheat the oven to 180 degrees Celcius.
Mix the oats, flour, sugar, salt and desiccated coconut.
Melt the coconut oil and add it to the dry ingredients along with the water and vanilla extract.
Add more water if the mixture is too dry and not combining.
Create 12 evenly sized balls and put them onto a baking tray lined with baking paper.
Press each lightly down with palm.
Bake for 12 to 15 minutes, until the edges are golden brown.
Allow to cool on the baking trays for 10 minutes and then transfer to a cooling rack.
